Little animals. Here's a few:
Quail

Health: 5
Armor: None unless given Quail Mail
Habitat: Plains, sparse jungle, & savanna biomes
Behavior: A good farming animal, but fast and with the (kinda) ability to fly. You can find them amongst grass & you might hear their majestic call (helping you find their location). As a baby, they have a "bumblebee-like" pattern but will grow out of it as an adult. You can breed them with mealworms (a new food source found occasionally by breaking logs or leaves on the ground). They will not follow the item, however. The only way you can get them into a farm is to use a lead, minecart, boat, or some such thing.
They will lay eggs that can be cooked & eaten or crafted into an egg bundle as an alternative to normal chicken eggs. They also drop meat. The meat and eggs have decent saturation, but not too much hunger value.
Quail will run from players, foxes, wolves, cats, ocelots, & fennec foxes. All of those hunt them but wolves. When running, they might try to fly away. They do not take fall damage.
Never name a quail "bob".
Chinchilla

Health: 20
Armor: 1 (because of thick fur)
Habitat: Deserts & mountains
Behavior:
Chinchillas are neutral mobs that will attack you as a group if hurt. They are tamable & breedable with bread (who doesn't want an army of fluffballs?). Will leap at targets & doesn't take fall damage.
Fennec Fox
Health: 16
Armor: 0.1
Habitat: Desert
Behavior: A rare mob. The Fennec Foxed will run around, hunting bugs or birds (if you have tamed jumping spiders, keep them away!). You can breed them with sweet berries or mealworms. They are fast & their babies will follow them.
Jumping Spider
Health: 15
Habitat: Spawns anywhere where monsters can
Behavior: A neutral mob. Though smaller than normal spiders, these little guys hunt spiders and cave spiders, quite effectively. They jump at their targets (as the name implies) & are the only species that has a wither venom effect. They are tamable with mealworms.
Moth

Health: 10 (Moth), 13 (Caterpillar)
Habitat: Forests (moths spawn in darkness, or rarely when a lantern is placed)
Behavior: Caterpillars & moths can be found in forests, where caterpillars decimate the local trees & moths eat wool & break lights (torches, lanterns, & glowstone). They are pretty big, what did you expect?
If you breed moths with leather or wool items, they will spawn a caterpillar. Caterpillars will seek out leaves and will eventually turn into a Chrysalis, which will turn into a moth.
The Gray wood variant is moth common, & Snow fluffs only spawn in dark forests. You can catch and release moths with a butterfly net. If you kill a moth they will drop moth wings, depending on their type. You can use them to craft moth wings, which give you jump boost & slow falling when worn.
You can also eat moth wings, though I wouldn't recommend it, as it will most likely make you hungry & sick, or has a small chance to turn you into a tiny moth person for 25 minutes, just like real life!
Tortoise

Health: 26
Armor: 11
Habitat: Beaches, some forests, Savanna, swamps, & Deserts
Behavior: Their variant depends on their spawn location. The yellow variant is only found in the desert, the red on beaches, & the green wherever else it may spawn. Just like Turtles, Tortoises are hunted by the undead mobs. If hurt, a tortoise will hide into its shell to reduce damage and regenerate. If a perceived threat or player is nearby, it won't exit its shell again until the threat has passed and/or its health is fully regenerated. If you have a pet tortoise and its hurt, make sure you give them some space for a little bit.
Yes, you can tame them, and you can carry them if tamed. You can breed & tame tortoises with carrot or beetroot, & they will follow those items.
Hope you like finding these guys in your minecraft world. Again, don't name a quail "bob"!
