So, I'm trying to access a mod of mine, but it's for Fabric 1.21.8. Originally, I had the Fabric 1.21.8 Generator, but then I downloaded 2026.1, and tried installing the plugin again, and now it isn't working!

You need to just wait for the plugin to be updated.
When the MCreator version updates, plugins for it also need to be updated. Kind of like how a mod for Minecraft 1.21.8 wouldn't work in Minecraft 26.1, for example.
The Fabric Generator is already updated to 2026.1 since the firsr hours of the 2026.1 release. However, I released a new update today, so try downloading it. It may help your problem.
