How can I make knockback go to another direction and I don't know how to use the procedure mob is hit with tool or is it something else I have to do (Never used procedures before)

You mean like when you hit another player or mob with the enchantment "Knockback"?
If so, you could give your mob an enchanted item (can be any) with the enchantment id for knockback.
