I am trying to make my own models but where can I find the vanilla mob models so I can import to blockbench and edit it on my own, and afterwards import it as .JAVA to mcreator

Yes, using Blockbench, I just created a custom mob based on the Blaze model.

 

You can download Blockbench here: https://blockbench.net/downloads/

Install and run the program, then go to Filter > Plugins... in the menu bar.

Then go to the tab "Available", scroll down and find CEM Template Loader, click "Install".

After that, go to Filter > CEM Template Loader and choose the template of vanilla entity you want to use. You can then add a texture by clicking the "Import texture" button at the left.

You can get vanilla entity texture files (.png) if you unzip the game's .jar file. (For example, if you have installed the 1.16.2 version of the game, search for 1.16.2.jar in your file system, copy it on your desktop and rename it into 1.16.2.zip, extract it there and look for the texture (or search for *.png inside the extracted folder))

You could use constant Z rotation animation type for this, just make sure to use proper pivot point

I know, but the "constant axis rotation" is too fast, and if I use "slow constant rotation" for all sticks, they all rotate with the same speed in the same direction... Is it possible to manually change the rotation speed (and direction)? Or do I have to locate and modify the values somewhere in the code?

Yes, it should be in the render method of your model inside entity using it
