I have tried using modelers like tabula and blockbench and researched how to use them, but I can't get the hang of it. Anyone know any good free software I could use?
Try to learn Blockbench, it is not that hard.

Blockbench is pretty much the only option. How can you be "not good at it?" It's easy and simple, how could you get something less complicated? Your options are pretty much Blockbench or writing the .json or .java models yourself.
