How to make large structures

Every time I use Structure Blocks to make larger structures, they always come out wrong with pieces missing out of them. I also tried to make schematics with WorldEdit but they don't save as NBT Files.

I know you can do a bunch of complicated stuff with procedures but I don't wanna have to go through that with every structure I make.

Is there any simpler way to make large structures that will appear whole?
