I can't find Zombie as a built in model, I know it used to exist, but I can't see it now. Is it still a thing? Why can't I find it?

You should use Biped.
It has the same dimensions as a zombie
I tried, but when I use zombie textures, it is just a random mess of textures all of the head
Make sure the textures are 64x32, not 64x64.

zombie model is not supported in 1.14+.
