I made a custom dimension with nether-like gen and made a biome that generates grass everywhere, but even after I tagged the ground as Forge:dirt, grass and trees do not spawn.

So i tried generating it with the end style and it worked, so i think it just doesn't like the nether-like gen
Please open a bug report on https://github.com/MCreator/MCreator/issues asap and include a demo workspace
No need to, I tested and even if one just configures normal JSON dimension with JSON biome with vanilla trees, they won't spawn, meaning trees any longer work in 1.16.5 due to MC design. Huge fungus ("nether tree") is a separate feature and not based on a tree generator.
This means you may need to resort to a custom structure for nether trees.

BUT THE STRUCTURE WON'T SPAWN
did you try setting it to spawn underground?
you have to make sure it spawns underground otherwise it will spawn above bedrock
