I want to create a sapling for my new mod, (it adds custom trees,) but I do not want to use any third party app like other posts I have seen on how to make a sapling. Is there any modern, up to date version explaining how to do this?

Yes, there are many different tutorials you can follow on Mcreator's Forums, especially for creating your own sapling.

Is there any way to make a version that has variations?
use the random number block, and in the procedure where the sapling grows, just have it randomly pick between spawning multiple different structures of the tree
