I suggest either making another version of the mob with that model, or creating an animation (it doesn't have to be animated, just in that model pose) to make it change. does this plugin works for Mcreator 2021/Minecraft 1.16 ?
i dont know what happened but on mcreator 2021 i just cant make my tamed mob to sit or even stay... the code would not let me even change the tame item.. it uses the same as breed item :(
