What's the difference between canceling an event and changing the result of an event to "deny"?

What's the difference between canceling an event and changing the result of an event to "deny"?

Alright, but what does allowing/denying an event do? I know what cancelling does, but can't figure out exactly what the other thing does

Eg. when item is used, deny…

Eg. when item is used, deny action will tell Minecraft that item use was unsuccessful. This is eg. used to determine animations, and further actions the item may do.
